Main points to consider
Key Points	Include at least one burner or radiant that is more powerful than the others for fast boiling or heating large pans. Sealed tops are easier to clean, ease of cleaning should be considered when choosing your range
Ovens	Wide choice of sizes with side opening and drop down doors.
Type	Do you require electric or gas oven, static or convection oven. Static oven relies on heat to distribution temperature around the oven. Convection oven aids even heat distribution via a fan thus ideal for bakeries and deserts although generally more expensive than a static oven.
Convection	While many ovens underneath cooking ranges rely solely on the natural convection of hot air in the oven cavity to spread the heat, in a convection oven, the heat is spread very evenly around the cavity by means of an electric fan built into the wall of the oven. This gives very even cooking for all foods, but it is especially important in bakery and dessert work where evenness of temperature is critical
