Cooking foods in the open, or placing them hot into a standard fridge is no longer acceptable. To prevent bacteria growth hot food should be chilled quickly using a Blast Chiller. If freezing the quicker the freezing process the smaller the size ice crystals formed in the food, and therefore the better quality food when defrosted.
